The regions and departments crossed by the Canal des Deux Mers are well known for their exellence in gastronomy.
All along the Canal du Midi typical food is one of the finest in the world ! Do taste the bouillabaisse from Séte, oisters from the Etang de Thau, Pézenas pies or snails and bourrides from Narbonne and for a sweet tooth one can enjoy the Béziers specialities called the Biterrois and the Poutou , or the Narbonne sweet named Zygomothe.

Wine is also present in this south part of France. The largest french vineyard is located there.The Mediterrannean hot and windy climate gives an original and diversified taste to the Saint Chinian thje Muscat wine, the Minervois , the Corbières or the wine from the Coteaux du Languedoc.

The Cassoulet originaly from Castelnaudary is on all the tables from Toulouse to Carcassonne. Have a taste of the famous Montagne Noire 's hams and the delicious Lauragais "confits". (duck or goose cooked in its fat)

In Toulouse, beginning of the Canal Lateral to the Garonne river, one can try the special sausages cooked in lentils. Toulouse 's emblem being the violet a lot of culinary specialities are made out of it : violet sweets, jams, thes or liqueurs.

In the Garonne valley, the culinary diversity is amazing with delicacy like "foie gras " liver from duck or goose.

The poultry confits served either with fruits or Chasselas grapes from Moissac , the Agenais plums and prunes, the croustades of Quercy witch is a pastry from the department of Tarn et Garonne, the tricandailles, the lamproies and sturgeon from the Bordeaux area.

The great thing in this gastronomy trip is that every dish has its complementary wine.
